A major part of the price of Gin in Australia is paid to the taxman. Excise duty accounts for $101.85 per 1000ml of alcohol. That’s about $21.90 plus GST per 500ml bottle at 43%; it’s the 3rd highest in the world.
Each year, Australian craft distilleries are allowed to sell about 15,000 bottles and not pay Excise Duty. We decided to sell them direct to you and pass on the Duty Free savings.

We are proud to present our new gin series, the Walter Hill Curator’s Series, an homage to the pioneering spirit of Walter Hill, the first Curator of the Brisbane Botanic Gardens. Walter Hill’s contributions to the Gardens, and his dedication to the acclimatization of various economically beneficial plants, mirror our dedication to crafting exceptional gins. Each gin in this series is a reflection of Hill’s legacy, embodied by the historic stone Walter Hill Fountain – the inspiration for the colours of these bottles.
Pure: The Essence of Juniper
Our ‘Pure’ gin is a tribute to simplicity and quality. It is carefully distilled to highlight the essence of Juniper, capturing the purity and essence of this foundational gin botanical. We’ve added spruce to enliven the pine and delicate citrus notes of Juniper. This gin is our nod to the purity of the water from the Enoggera Reservoir that flowed through the Walter Hill Fountain. 01: Queensland Botanicals
Our ’01’ is a celebration of local flora. Inspired by Walter Hill’s work with Queensland’s native plants, this gin is infused with a selection of botanicals that are as vibrant and diverse as the state itself, reflecting the local character and Hill’s horticultural expertise. This gin recipe is derived from Queensland Dry, the most highly awarded Gin of Brisbane: A multiple double gold winner.

02: Australian Botanicals
Our ’02’ gin takes you on a journey across Australia. It features botanicals sourced from various parts of the country, representing the vast and varied landscape of Australia, much like Hill’s wide-reaching influence in the world of Australian horticulture. Individual Bottle Price $79.
This gin recipe is derived from Strawberry Eucalyptus, the second most popular Gin of Brisbane.

03: Floral Garden Herbaceousness ’03’ is a homage to the lush gardens curated by Walter Hill. It boasts an earthy, herbaceous profile, reminiscent of a walk through the Brisbane Botanic Gardens. This gin captures the essence of a well-tended herb garden, bursting with life and flavour. Individual Bottle Price $79.
Olive Seeds are a unique botanical extracted from within the stone of the olive, they deliver a delicious savouriness and together with the herbs, make for an excellent savoury cocktail base mixed with any vegetable based juices – or Tomato Juice for a Red Snapper (Bloody Mary with Gin). It’s light floral aroma adds to the experience.

04: Complex Spice – Barrel Aged
Our Fastest Selling Gin of all time, ’04’ is the most intricate of the series. A complex spice gin, it has been aged in old maple syrup bourbon barrels, offering a unique, rich flavor profile. This gin symbolizes the fusion of tradition and innovation, much like the Walter Hill Fountain, which blended practical utility with ornamental beauty. These barrels are not cheap, and lead to the elevated Individual Bottle Price $99.
Aged for 6 months in Ex bourbon Barrels that were previously used for Aging maple syrup! This gin makes an amazing Negroni with it’s hugely complex spice, golden brown hue and delicious citrus aroma.

05: Citrus Forward
Finally, ’05’ is new for 2025. A London Dry Style Gin with an extra twist of exotic citrus. For those who like a more standard gin profile the 05 is for you – obviously we don’t do boring gins, so we’ve slipped in a crate of our all time favourite citrus – YUZU – from the King Valley in Victoria. Since this is an extra botanical to our normal flavour balance you will notice the terrific flavour of yuzu just popping above the well balanced backbone that we have created with the more standard botanical blend. $89.

Why 500ml?
A: This is about choice and minimising risk for you. Whilst we can tell you that 3 of the gins in our lineup are recipes that have won multiple double golds at big international events in San Francisco, London etc, they were judged with a different label on them. (01, 02, 04). Pure and 03 came from the same brain and will win in future, but they are new. So, you get to try 3 gins at 43% ABV – that’s 17 standard drinks in each bottle if you compare to a 700ml bottle you will find many at 37% that is just 20 standards so our bottle at $33 is $1.94 per standard compared to a 700ml at $46 at $2.30. Why are standard drinks important? It’s a direct correlation with excise – and that is why most mass produced alcohol is at 37% – we sell you more flavour and less water! Further, if they were 700ml they would weigh too much to ship economically and they would be too expensive for most people to try on a whim. Either way – when you find one you like you can buy 3 of it!
