Crafted in small batches using traditional copper pot distillation, Walter Hill 07 is a refined expression of Australian citrus, built upon the timeless structure of a classic London Dry. Every botanical is individually selected to create exceptional clarity, balance and depth, resulting in a gin that is both elegant and unmistakably contemporary.
Bold juniper forms the backbone, while coriander seed and warming cinnamon add complexity and spice. Fresh lemon brightens the palate before giving way to the delicate perfume of premium King Valley yuzu. A touch of liquorice root rounds the spirit with a gentle natural sweetness, while native Tasmanian pepperberry lingers with a soft aromatic warmth and a beautifully clean finish.
